This smoothie packs beetroot, carrots, courgette and spinach into one glass. The carrots and beetroot provide the sweetness, the courgette a light mellow taste, and the spinach a rich flavour.
The method is easy to adapt to your favourite vegetables, but it is important to keep the proportions of juice and leaves the same, otherwise the drink will not blend well. Vegetables can also be combined with fruit for sweeter tasting smoothies.
To make the drink you will need a juicer and a blender.
Carrots and beetroot make sweet juices, nice enough to be drunk on their own. Start by juicing the carrots, courgette, and beetroot with the juice collected in a jug.
Beetroot juice is a dramatic deep purple colour, helping make the smoothie look good and inviting to taste.
Add all the juices to the blender. Then the washed young spinach leaves. Give the mixture a blast for a few seconds and the drink is done.
I think the drink is best enjoyed freshly made.
