This recipe makes a deliciously sweet tomatillo soup with a hint of spice that comes from the jalapeño pepper.
Originating from Mexico, tomatillos have a taste similar to peppers, but a little more fruity. Tomatillos are especially good in soup and salsa.
The natural sweetness of the tomatillos is complemented by the other ingredients, including slow cooked onions and peppers, sweetcorn, and peas.

Start by removing the tomatillos from their paper husks. The fruit will have a sticky coating on the skin that can be removed by soaking and rubbing.
Prepare the tomatillos by chopping into quarters ready for cooking, and slice up the elephant garlic cloves (or use normal garlic). Similarly, finely chop the two medium onions.
Add olive oil to a large deep sided saucepan and add the onions, garlic, and the chopped tomatillos before setting aside. Do not start cooking yet.
Next, prepare the peppers by cutting into 2cm long pieces, discarding the seeds and pith, and finely chop one jalapeño pepper, again discarding the seeds and pith. Pour some olive oil into a frying pan, and add the chopped peppers and chilli before covering ready for cooking
Finish by preparing the sweetcorn, frozen peas, and chopped coriander. Place these into bowls and set aside for later.
Start cooking both pans over a low to medium heat stirring occasionally. The objective is to cook all the ingredients until they soften and sweeten.
The tomatillos and onion will be ready first. The saucepan should be removed from the heat. Continue cooking the peppers and chilli until these are ready too, and then combine them into the tomatillo pan.
The remaining ingredients are now added to the tomatillo pan. Start with the sweetcorn and peas, then 1.5 litres of stock made with one stock cube, and finally the coriander. Bring the mixture to the boil, cover with a lid, and simmer over a low heat for a further 10 minutes.
Before serving, blend the soup with a hand blender or food processor. The tomatillo soup has a lovely fruity sweet taste, complemented by the spice of chilli.
